El Filo, Colombia - Pink Bourbon Semi-Washed

PRODUCER

Produced by Diego Rodríguez from finca El Filo in Palestina, Huila, one of Colombia's most influential coffee regions.

What began as a small family project alongside his aunt and uncle gradually grew into a greater effort, involving multiple generations of his family, and more recently, neighboring producers across the area.

Today, they work with a total of eight varieties and thirteen different offerings across a wide range of processing methods, including natural, washed, and semi-washed.

Pink Bourbon was the first variety Diego planted at the farm and remains a central part of their work today. It has also become a staple at El Filo, helping define the quality standards behind their coffees.

PROCESSING

For this coffee, cherries are selectively handpicked at peak ripeness before being depulped and fermented for 72 hours in sealed heavy-duty fermentation tanks (HDPE). The coffee is then washed and dried under the sun in marquesinas (drying beds) for approximately 12 days.

ROASTING

Once in our hands, we approach it with a light-medium roast profile designed to preserve the character developed in origin. We've found this coffee benefits from a slightly longer development phase than others within our lineup.

FLAVOUR

The result is a balanced profile with a pronounced molasses-like fragrance once ground. In the cup, bright and juicy honeycrisp apple acidity lingers softly, supported by a subtle chocolate note in the background.
